Chickpea and Corn Salad
Great Summer Dish, Chickpea & Corn Salad

- 2 Cups Corn Kernels
- 15 oz Garbanzo Beans Chickpea
- 2.5 Cup Cherry Tomatoes Quartered
- 1/2 Red Pepper Diced (Can Use any color pepper)
- 1/4 Cup Red Onion Diced
- 3/4 Cup English Cucumber Chopped
Cilantro Lime Dressing
- 1/3 Cup Extra Virgin Olive Oil
- 1/4 Cup Fresh Cilantro Chopped
- 4 Tbsp. Lime Juice
- 1 Clove Garlic Minced
- 3/4 tsp Coarse Salt
- 1/4 tsp Pepper
Into a small bowl, add the Cilantro Lime Dressing ingredients. Mix well, set aside.
Into a large bowl, combine the Corn, Garbanzo beans, Tomatoes, Pepper, Red Onion and Cucumber. Combine.
Add the Cilantro Lime Dressing to the Large Bowl.
Cover Salad and place in the Refrigerator for at least an hour. Stir and Serve.
