This one was for me, yep, I love gnocchi. I have a great recipe for Olive Garden knockoff gnocchi soup, but I was in the mood for something different.

This one was pretty simple to make and most of the ingredients I had on hand already. A quick stop at the store for some gnocchi and sun-dried tomatoes and I was ready to get started.

Start to finish with this one was under 20 minutes and it hit the spot for a great gnocchi recipe with lots of flavor.

Ingredients:

  • Butter
  • Minced Garlic
  • Chicken or Vegetable Broth
  • Whole Milk or Heavy Cream
  • Gnocchi
  • Sun-Dried Julienne Tomatoes
  • Parmesan
  • Lemon Juice
  • Salt & Pepper
  • Baby Spinach

If you love creamy comfort food with bold Italian flavors, this Creamy Tuscan Gnocchi is a must-try! Made with tender potato gnocchi, fresh spinach, sun-dried tomatoes, and a rich parmesan cream sauce, this quick skillet recipe comes together in about 15-20 minutes. It’s the perfect weeknight dinner or side dish that tastes like something from your favorite restaurant—but made right at home.

How to Make:

  1. To start you will melt your butter on a low heat in your skillet. Add your minced garlic to the butter and sauté for less than 60 seconds.
  2. Add your Whole Milk or Heavy cream and the Chicken or Vegetable broth to the garlic and butter, let this come to a simmer.
  3. Next you will add the gnocchi and sun-dried tomatoes, stir everything. Cover your skillet and allow to cook for 5 minutes.
  4. You will need to check if gnocchi is tender. When gnocchi is tender, you can stir in the baby spinach, parmesan cheese, lemon juice and salt/ pepper to taste. ** You may not need salt if your sun-dried tomatoes had added salt. ** I added sale the first time I made this and WAY too salty.
  5. Last step, when the baby spinach is wilted, remove your skillet from the heat. You can add additional parmesan before serving.

Creamy Tuscan Gnocchi

Ingredients
  

  • 1 tbsp. Butter
  • 3 cloves Garlic Minced
  • 2/3 cup Chicken or Vegetable Broth
  • 3/4 cup Whole milk or Heavy cream I have used both and turned out great each time
  • 16 oz Gnocchi(uncooked)
  • 1/3 cup Sun-Dried Julienne Tomatoes I used sun-dried tomatoes not in oil. You can add more if you prefer.
  • 1/2 cup Parmesan I have used fresh and processed
  • 1 tsp Lemon juice
  • Salt & Pepper to taste If your sun-dried tomatoes have salt added, leave out the salt
  • 2 cups Baby Spinach Trimmed and chopped

Instructions
 

  • In your skillet, melt the butter on a low heat. When butter is melted add your garlic and sauté on a medium heat for no more than 60 seconds.
  • Stir in the whole milk or cream and the vegetable or chicken broth. Bring these ingredients to a simmer.
  • Add the gnocchi and sun-dried tomatoes, stir everything. Cover your skillet and cook for 5 minutes.
  • Check if gnocchi is tender. When gnocchi is tender, stir in the baby spinach, parmesan cheese, lemon juice and salt/ pepper to taste. ** You may not need salt if your sun-dried tomatoes had added salt.
  • When the baby spinach is wilted, remove your skillet from the heat. You can add additional parmesan and enjoy!
