Kids are out of school and the weather is consistently warm here in Michigan. Time for some nice nights outside to barbeque. This recipe is a great addition to any summer meal. Honestly, I made it to eat for my lunch for a few days.

The fresh summer ingredients and easy to make Cilantro-Lime dressing are the perfect combination for a flavorful side dish or lunch. I LOVE cilantro, but I suppose if you do not, you could replace it with fresh parsley.

Give this one a try, it was exactly what I was looking for. Hope you enjoy this one as much as I did.

Chickpea and Corn Salad

Great Summer Dish, Chickpea & Corn Salad

Ingredients
  

  • 2 Cups Corn Kernels
  • 15 oz Garbanzo Beans Chickpea
  • 2.5 Cup Cherry Tomatoes Quartered
  • 1/2 Red Pepper Diced (Can Use any color pepper)
  • 1/4 Cup Red Onion Diced
  • 3/4 Cup English Cucumber Chopped

Cilantro Lime Dressing

  • 1/3 Cup Extra Virgin Olive Oil
  • 1/4 Cup Fresh Cilantro Chopped
  • 4 Tbsp. Lime Juice
  • 1 Clove Garlic Minced
  • 3/4 tsp Coarse Salt
  • 1/4 tsp Pepper

Instructions
 

  • Into a small bowl, add the Cilantro Lime Dressing ingredients. Mix well, set aside.
  • Into a large bowl, combine the Corn, Garbanzo beans, Tomatoes, Pepper, Red Onion and Cucumber. Combine.
  • Add the Cilantro Lime Dressing to the Large Bowl.
  • Cover Salad and place in the Refrigerator for at least an hour. Stir and Serve.
