Kids are out of school and the weather is consistently warm here in Michigan. Time for some nice nights outside to barbeque. This recipe is a great addition to any summer meal. Honestly, I made it to eat for my lunch for a few days.
The fresh summer ingredients and easy to make Cilantro-Lime dressing are the perfect combination for a flavorful side dish or lunch. I LOVE cilantro, but I suppose if you do not, you could replace it with fresh parsley.
Give this one a try, it was exactly what I was looking for. Hope you enjoy this one as much as I did.

Chickpea and Corn Salad
Ingredients
- 2 Cups Corn Kernels
- 15 oz Garbanzo Beans Chickpea
- 2.5 Cup Cherry Tomatoes Quartered
- 1/2 Red Pepper Diced (Can Use any color pepper)
- 1/4 Cup Red Onion Diced
- 3/4 Cup English Cucumber Chopped
Cilantro Lime Dressing
- 1/3 Cup Extra Virgin Olive Oil
- 1/4 Cup Fresh Cilantro Chopped
- 4 Tbsp. Lime Juice
- 1 Clove Garlic Minced
- 3/4 tsp Coarse Salt
- 1/4 tsp Pepper
Instructions
- Into a small bowl, add the Cilantro Lime Dressing ingredients. Mix well, set aside.
- Into a large bowl, combine the Corn, Garbanzo beans, Tomatoes, Pepper, Red Onion and Cucumber. Combine.
- Add the Cilantro Lime Dressing to the Large Bowl.
- Cover Salad and place in the Refrigerator for at least an hour. Stir and Serve.
