We love a good muffin in our house — and we really love a classic cinnamon sugar donut. These Cinnamon Sugar Donut Muffins bring the best of both worlds together in one easy, homemade breakfast treat.

Soft, fluffy muffins coated in melted butter and rolled in cinnamon sugar taste just like a bakery donut, but with none of the frying. I whipped these up on a Saturday morning for my family of four, and they disappeared almost immediately — always the sign of a keeper recipe.

Made with simple pantry ingredients, these muffins come together quickly and bake in under 20 minutes. Yes, the cinnamon sugar topping can get a little messy (worth it!), but the result is a warm, comforting breakfast or snack that everyone loves.

“Cinnamon Sugar Donut” Muffin

Equipment

  • Muffin Tin

Ingredients
  

  • 1 1/2 Cup All-purpose Flour
  • 1/2 Cup Granulated Sugar
  • 1 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/2 tsp Salt
  • 1/2 tsp Ground Cinnamon
  • 1/2 Cup Milk Any will do, I have used 1% and 2%
  • 1/3 Cup Unsalted Butter I have used Margerine in a pinch/ Melted
  • 1 tsp Vanilla Extract
  • 1 Large Egg
  • 1/4 Cup Granulated Sugar For Topping after baking
  • 1 tsp Ground Cinnamom For Topping after baking
  • Melted butter/ or spray butter For Topping after baking

Instructions
 

  • Pre-heat your oven to 350℉.
  • Line 12 muffin tin with liners, or grease muffin tin well
  • In a large sized bowl mix together the Flour, Sugar, Baking powder, Baking soda, Salt and Cinnamon.
  • In a separate bowl, mix together the Milk, Melted Butter, Vanilla and Egg.
  • Add the wet ingredients (Gradually) to the large bowl with dry ingredients. Stir this until combined, DO NOT overmix the ingredients.
  • Fill your muffin tins (3/4 full) with the batter.
  • Bake in the pre-heated oven for 18-20 minutes. I usually bake for 16 minutes, and check start to check the muffins, you want them golden brown and inserted toothpick comes out clean.
  • While muffins are baking, in a small bowl mix together the 1/4 cup granulated sugar and the 1 tsp cinnamon sugar.
  • After the muffins are done baking, allow them to cool for a few minutes. Next you will either dip them into melted butter or spray the tops with spray butter and sprinkle on the cinnamon & sugar mixture.
